I never do the math, I just play. So I could be wrong. Dual wield does more damage it seems. But this seems to apply more with lighter weapons, short swords, axes and hammer. Never tried daggers. If you dual wield grand weapons. It is suppose to do more damage, but it felt clumsy and slow. Most of the unique and faster weapons move sets are available if you single hand or double hand a weapon.
While most of the time, per hit, my experience that dual wield definitely do more damage. But the moment when it comes to Grand weapons. It becomes clumsy. Long swords on the other hand appears clumsy but they FEEL way better and smoother than Grand size weapons.
If you two hand a grand weapon, the weapon move sets feel a lot more "natural" and faster. My favorite is still grand swords or grand axes, not so much Short swords or grand hammers.
