That was the place that I almost stopped playing the game. I even put the game down for a few days. Eventually I came back and went 100% dodging (I was playing with parrying/blocking previously) and overcame Pieta. The learning from that fight payed off in spades going forward.
There is another boss, then a boss in a hole (being vague on purpose to avoid spoilers), and I think both of them are better done with light rolls as well. After that, you should have better armor available, and that is about the time I think you should make the switch.
Just my opinion though.
