As far as the key left by Stomund, it's a part of his quest and triggered by game progression. You don't actually have to buy the key as you will eventually get it.
Will eventually start speedrunning this game with some NG characters at some point. No worries if this is in line with your playstyle. Some of my friends like being OP. IMO it's kind of a problem because you fail to learn the game's mechanics when you're OP. Things die too fast.
One example: I didn't know until yesterday that if you dodge forward or roll into Lucent Beam being cast on you that it staggers the enemy using it on you. Doesn't even matter how far aware from the enemy you are when you do this. So it can't 1-Shot you with that spell. I probably wouldn't have known this if I wasn't just running around and seeing how long I could live without attacking anything yesterday.
