Knight with a halo and a big glowing great sword
Having issues with these guys. They have a ton of HP and have a large circumference to there attack and turn around and hit you in a split second.

Well you better learn dealing with them. They become a quite regular enemy later on.

There is no real trick. Dodge at the right moment. Try use the sidestep rather than really rolling with double tap.

Guess I'm going to have to die a few times first. Not to mention if they hit you 1 hit kills me.

You might want to start getting Vitality if 1 hit kills you, most of it's attacks are pretty telegraphed so it's easy to parry or dodge it, only issue would be their dodge which creates an attack but again telegraphed and can be avoided pretty easily.

Also don't forget you can Soulflay enemies which is pretty much a stun that lets you get a bunch of free hits in

I solved my issues with them by Duel-Wielding Greatswords.

as the others said:
parry, it's great and even someone as slow as myself can get it down
singel button press dodge, don't vault. this is probably the strongest move in the game
and probably the best feeling iteration of a "dodge" i've played...the i-frames are on point and very friendly/responsive..
widdle em down via parry, heavy charged and lamp to finish-stab em, that's usualy my goto
