There is no real trick. Dodge at the right moment. Try use the sidestep rather than really rolling with double tap.
Guess I'm going to have to die a few times first. Not to mention if they hit you 1 hit kills me.

parry, it's great and even someone as slow as myself can get it down
singel button press dodge, don't vault. this is probably the strongest move in the game
and probably the best feeling iteration of a "dodge" i've played...the i-frames are on point and very friendly/responsive..
widdle em down via parry, heavy charged and lamp to finish-stab em, that's usualy my goto
