This is my exact experience with the PVP aswell, very disappointing as I bought the game specifically because I love invading/being invaded in these games.
Let me guess, you're someone that benefitted from duping skulls so you could max out your level to invade low levels, and now you're just sad that you can't grief.
You say "Genuinely" wants to play, but you see. The main menu button is completely usable in any given scenario, so that is just using what the developers gave us. You invade, you use a meta build, you see the loading screen. It's not rocket science.
I had someone invade me yesterday with a bleed build, bloody hatchets, bleed on their weapons, dual wielding. We had a fun fight. Adversely I've had people invade with dual pieta sabers and he just slashed through me like tissue paper. I'm good, you guys can just keep looking for someone to fight, but until you get a thought in your head that doesn't derive from a youtube/twitch video/clip, I will continue to remove you.

I mean, you're totally new to souls games if you think having the ability to invade forever downwards means people are going to be accepting of PvP.
And as for not ruining it for people who want to genuinely play? Try not invading then until the devs fix the pvp issue. Ain't no fun getting invaded and being literally unable to kill someone due to their high defense and passive health regen while they just poise through all attacks to land a single heavy to kill you in one-shot.
The game isn't even designed to have invasions in the spirit of the genre. There's a reason that invaders got limitations placed on them with each subsequent soulsborne game. Now there's no limits so max level characters can invade a new player, blocking their ability to leave umbral, place seedlings or even recover their vigor. In such a scenario, that player has no hope of overcoming the invader, and even if the invader was the same level, the host is in a time limit until dread fills completely.
