Strategy is as follows:
Phase 1: Stay close to the feet and hack away at them whenever the boss is not attacking you.
Phase 2: Run up the stairs, use ranged weapons and spells if you can, dodge the boss's melee attacks. As soon as the boss begins casting the arena wide aoe, hide behind the remaining parts of the wall. Afterwards, use ranged weapons and spells again, dodge the melee attacks, etc.

Play it safe hitting his legs in the beginning, this is a short phase. Roll into the fire circle when he slams, run from the THREE explosions that follow you, dodge when he swings / slams his body.
Second phase
-Run up the steps and dodge when he swings his hand at you. Get hits in if you can.
-When his head is level and he shoots the arm out of his mouth, dodge it. As it goes back it will shoot out another two times. When he slams for a fire ring roll into it and attack.
-When he slams his hand, dodge and attack.
-When he is making a small bomb on the platform, run across the edge to the next area.
-When he is making a giant sun looking bomb, hide behind the walls along the edge (still on the upper area of the arena) He will eventually be exhausted after doing this when his health is low, go down and attack him during this until he dies.
Sorry if this is a bad explanation, I just did this fight and understand what you're feeling. Good luck, and serious be patient. It's a long fight but really easy (sorry) Don't be greedy either!
Thank you for writing all of this out! I appreciate it. I got the strategy down but I’m having a hard time dodging his hand attacks. I dodge but get hit anyway. This is only my second souls game (after Lies of P) so I will be struggling for awhile.
Sorry, I meant his actual arms swinging at you. Not the hand that comes out of his mouth.
I found for me, dodging toward him worked best for all of these attacks, but I was also rather aggressive and wanting to get as many chances to hit him, and me playing this came after binging through several others. That being said, I can understand dodging being hard to get used to if Lies of P is your only other experience since dodging wasn't as much a focus in that one. Dodging in this game is very strong. After a couple runs, you'll have the timings down and be able to dance around that platform like it's nothing
