Any tips for the Healing Knight?
there is this annoying enemy which is as tough as a mini boss. and he heals himself every 10 seconds.
He is all over the place. I met him in so many different areas.
any Ideas how to take him down?

Boss version? Destroy a parasite near him. Normal version? I yeet em off a cliff. If there is no cliff, it's a series of rolls and parries.

He once appeared as a boss. I killed him. now he just keeps coming as a regular enemy. he has this move that a yellow aura gets around him, he goes into a guarding stance and starts healing himself.
his outfit looks like a knight.

He also has another move which he summons a mimic of himself, the mimic hits you once and disappears

You're talking about the Crimson Rector. Yeah, he only summons the clone of himself when he is buffed (Sword glowing.) In the boss fight variant, you destroy the parasite behind him to cause an explosion which takes his buff away. In the normal fight, it just wears off (From what I've seen.) It's moments like that, that I soul flay him and damage him enough to normally down him for a grievous strike.

When he is blocking/healing, hit em with a heavy and be prepared to dodge the counter, IF he counters.

As the crimson rectors heal themselves they'll be on the defensive, if you have a hard-hitting weapon, then charge it up for a special attack --> Crimson Rector will do a wide sweep attack in response --> Dodge and immediately hold for heavy attack again --> It's usually ended at this point and the crimson rector will go back to normal pattern.

I have already said this before, the Crimson rector is a piece of ♥♥♥♥ enemy, and the game loves throwing it at you.

I just hit with the crossbow until he was half heal and every time he raises his sword and gets that healing aura, attack aggressively, you can just hit him, dodge, hit him, dodge, etc, to take the aura away.

Plus he's really not that bad, I just beat him drunk and I'm terrible at these types of games, just dodge a lot and don't take the bait after his rush lunge attack.
