If you need healing I recommend triple red stones, those are good enough.

This fight, as mentioned, is made a lot easier if you have a source of healing. Radian spells, namely its Invigorating Aura or Sanctify , are great tool for this. Once you solve your healing, the fight is rather simple but time consuming due to amount of HP Scarlet Shadow has. It is also dangerous due to its high damage output. Scarlet Shadow can wipe your HP in single combo if you are not durable enough. Most dangerous attacks are: 1.) his lunge from distance with a cross-slash at the end - highly damaging attack that is use randomly and rarely 2.) submerged attack - Scarlet Shadow can submerge during combat to reposition away from player and if followed too closely, it can attack as it emerged from the ground.
When Scarlet Shadow appears, just bite its emerging attack and punish with dodge attack. It usually submerge to reposition away from player so you can move after it and follow up with another attack. If you are less resilient or do not have good source of healing, you should play carefully and only attack once before disengaging. My durable character can actually commit to combo attacks and trade with the reaper for a bit. Another common attack is his lunge with whirling strikes--this is usually used when players are staying at distance and can be dangerous if caught attacks path. You should always keep track of Scarlet Shadow to make sure you are not surprised by its attacks. If you like to parry, his 3-hit combo is ripe for parry due to easy timing. However, Scarlet Shadow is such high level enemy that trying to break its poise is almost pointless. I was only able to get it down once and it was only because I focused on parrying and did not attack it other times.
One last thing is to deal with spawning Umbral enemies, I farmed a lot of Umbral for Vigor near Adyr's Shrine and regularly killed Scarlet Shadow. It is almost inevitable that other Umbral enemies will spawn during your encounter with Scarlet Shadow. I tend to ignore zombies until Scarlet Shadow submerge under ground, at which point I try to kill any zombies nearby. There is also a enemy with ranged attack that cause wither and can stagger you, this enemy should be killed as soon as possible whenever safe. Same goes for those imp-like creatures, when they spawn they are easy to target but later became agile and have charge attack that can interrupt you. Lastly, Maiden of Despair and Bringer of Stillness (Black Reapers) can spawn as well and should be killed quickly as they can cause trouble if they stay on battlefield for too long.
I also suggest fighting him in a low level area with a lot of space, where you cannot be invaded. I used the Pieta arena for that. That way the enemies that spawn are very low level, so they die quickly and do very little damage, This will give you a chance to recover withered health in an emergency. I killed him like 16 times yesterday so I could double up on the remembrance weapons. The only times I died was getting greedy or losing track of him at the worst possible times.
The arena for the first boss-fight is a great spot to fight him. Not too large so you can also easily pick up vigor from enemies that dies during the fight.
