This is a really big mistake people keep making. You have to engage with the mechanics LotF presents. Don't rely on vestiges, plant your own on seedbeds. Use the lantern and ranged weapons while fighting.
Not saying this is specific to you, but if you try play this like Elden Ring and ignore all the new tools at your disposal, you're going to have a bad time.

Out of Seedlings? Hop on Bell vestige go umbral kill enemies for vigor before the red reaper appears and go to Molhu and buy more. Continue play.

as the others mentioned. You have not rely on only vestiges. There are many seedbeds in the world, and on top you can always deactivate the Umbral world. (youre not supposed to be long in umbral anyway)
