Driving is a pain
The driving system is so bad; it feels so delayed and makes it hard to react to anything. Because it's such a huge part of the game it's going to frustrate a lot of people.

TBH have only got to the ranch and slept the first night 1 min in my first try there was an accident in the highway merge lane that blocked up the traffic and had to restart.. 2nd time i went and crash my car on the guard rail because i went too fast third time i ran over a pedestrian (saw a pop up but not sure what was the consequence) but kept driving to the ranch i put up the tent and slept...quit the game thinking I might want to wait for a fewe updates before playing it... each time my car was a different color so it could be nice if they let you choose the color of your car on game creation... the driving seems off but manageble the camera and lack of sense of speed is what really makes it bad IMO...
I don't think the driving is bad at all on keyboard and mouse, the AI traffic on the other hand is what can cause problems.
I personally agree with OP, difficult to drive and leads to an even greater issue of just all around clanky feeling maneuvering even when out of the car
After playing more, it sometimes feels like the car is turning too little, and other times it feels like it's just turning too much, which makes it hard to get a feel for how much to turn the wheel.

The AI is also a huge issue. People just walk across the road at intersections with no worry of what color the light is. The drivers would just randomly sit at a light with it changing.
I don't know how you guys are driving, but if you just approach it like you would drive something realistically it's really not bad at all.
Slow down when you're trying to turn, regulate your speed relative to your surroundings like you can obviously go faster on the highway, keep a distance to the other cars, especially law enforcement vehicles, they don't appreciate a fender bender lol.
When turning you have to react according to your speed, going fast you make light taps on your keys and going slow you able to just hold the right or left keys down more.
