They wont lay eggs until they are mature and have all their needs met and full satisfaction.
As for them vanishing, we would need a bit more information about the steps that led up to it, such as:
Did you connect them to the coop correctly?
Did you have an enclosed fence around your coop to prevent them from wandering away? Did you have any messages in your daily report about them?
Only after troubleshooting those basics to make sure human error was not to play can we then looking into the possibility of it being related to the known bug.

Let me know the answers to the troubleshooting steps and we will go from there.

Nowhere does it say that a fence is needed

I've had the same problem. I accidently chose "visit friends" at the tube instead of the local ride. My game saved and started a new day while the coop was still open. Now I can't see my chickens or interact with them, but the coop information says that they are still there.
Now I've quit the game, hoping to find them after restarting
Edit: Nope, didn't work

If you let an animal go in an open field without fences they will run off, that is just how the real world is and this is a life sim so it will have features that work as real life does.

Ouch that was very unlucky, unfortunately if the coop was open and they were not fenced in they will wander off and most of them end up picking fights with the traffic and not winning, sometimes you get a smart one that returns to the open coop if it hasn't wandered too far.

They don't appear in your inventory they will be in the fenced pen behind the NPC that sold them to you, it has a red delivery sign next to it.
