You can get "extra" attacks if you have high morale or have artifacts that lets you attack more times.
Most mages also attack only once. (Either in the first round or the second round of combat, depending on if you are attacking and have an upgrade or not.)
Oracles and healers also only act once, except Templars who can heal twice.
paladins attack and can heal 1x per combat if a unit falls below 50% hp, the mounted versions can too.... that's pretty much the reason for Diana's squad becoming uber-tanky even if you don't add to it; just upgrading her flanks gives that squad oodles of staying power.
You don't even need the oracle if you put arcane barrier on all her troops
With replenishing store stocks its not that difficult to get it in NG+
