I want to make a cyclops VTuber. Any helpful idea on how to mess around with this program to have only 1 eye iinstead of 2?
is there a way I could reshape/map the entire face structure?

Within VroidStudio, no, but you can import the vrm file into Blender and edit the face to your hearts content.
