open the console and type: bind (key) Command "me (Emote)"
the quotation marks are necessary
type svbind to save the binds or else you'll have to bind every time you join a server.

question: how to remove the bind or return the button to its original state

go to %appdata% > Space Station 14 > data > keybinds.yml ! you can edit and create new ones there too afaik. the file gets created when you run the command
