If he dies you'll be fine. You just have to do a quick backtrack before you can get to the last area.

I had completed the Kuafu's main quest.
I myself asked that question too.
The answer is you have another choice (game updated it).

- Go meet Sunny at "the mountain" (you knew what mountain) after you got the main quest notice. You will get the alternative quest.

- She will talk to you and ask you go back where Kuafu was dead, and pick up "the tree". It's the staff of the fallen giant.
The forest of the Fallen

- You head back to the mountain, follow quest event. Then the path open now. You may continue further to Chi You.

yes i have also done that to wait for sunny to appear, but nothing happened, i think i missed the mission but i keep going around looking for new mission but no new mission appear, i think its really bug with my save game after update (because of some mods maybe), because the giant died suddenly in our first meeting and didn't even leave a trace of his corpse, kinda regretted this but I decided to start a new game finally

I played without mods. I kept my checkpoint save.
Before game updated, the Giant was dead, then nothing happened as you mentioned.
After update released, you had seen what I posted above.
