Constantly raid his villagers. Stay away from Mangudai until you feel like you're really getting the hang of Mongols. They are a trap if you don't know exactly when and where to use them. They cost a lot, but aren't good in a fight. They are all about harassing and raiding. So until you are at a point where you are doing a lot of that while maintaining your macro, you may as well be throwing your resources in the garbage by building them. Also, if the enemy shores up his base with walls and defenses, they lose almost all ability to do anything useful at all.
So again, don't bother with Mangudai until you learn to recognize exactly where and when they'll be good. Even then, probably just make like 6 and run around with the Khan. Not a lot of reason to make more than that.
Mongol trade is excellent for the reason you stated, but also because of Yam network. Still, it's another niche strategy to go trade early. Trade is usually not something to be worrying about until the game is reaching the 30 minute mark.
Edit: Double unit production is mostly used for bigger stuff, like mangonels. It can be used early in some rush strategies to get a bunch of horsemen out or something like that, but mostly you don't need to use it on regular units. You have lots of uses for stone other than double building units.
They are made for early rush. Their scout (Khan) is also very good. They are difficult to play (hence the 3 stars in difficutly).
But when a very good player plays them its like:
"oh 2 speermen in Age 1, driving away my villagers from gold... oh now they build a tower with their villagers there, quick to the next gold.. oh damn same problem, more speermen, more towers, let me defend, oh he goes age 2, oh horsement, i need spears, oh damn archer horsemen, killing my speers and also they are faster then my cavalery, constantly firing at them... ok i give up, against this mongols"
It is an advantage as you save tons on wood but yea, the more you advance in game the less meaningful basic ressources become...it just happens faster to some like mongols.
Against dehli or abbasid you are basically already lost beyond 15 minutes mark
