Imo, unfortunately, the mastery system is a little badly implemented. It was a nice idea but they should have done an internal achievement system instead where special goals give +100xp and winning a skirmish or mplayer game with your civ always gives you +10xp. Then after 500xp you're leveling or something. Because seriously why do I need to fight an easy computer? Stuff like that should advance naturally and not require super specific steps to go to the next stage.
It should unlock easy master if you play easy or higher. AoE2 DE had the same issue with that too. Yea, this is pretty irritating, considering that every single mastery has that. This is just way of makeing game artificially longer that it really is.
Also easy AI giving 1000xp when some harder games are giving you only 200xp is pretty bad. I mean nothing special besides way of cheesing XP system and isn't that important but it could be done a little bit better. Besides that, it is pretty sad that I can just do one mastery at the time, but that's not the issue for me.
I managed to do Chinese Mastery 5 on the second attempt by only building the second house but no third. Get Song Dynasty and then build exactly two villages to get you to exactly 100 population, no more, no less. All in 2nd age, don't even go to the third age at all just to be safe.
It's a bit ridiculous, yeah. Now I'm stuck at "Shared Wealth" (generate 500 tax under Imperial Academy influence) which is not working either. I won't be surprised if you have to generate exactly 500 and 501 or more breaks it...
It should be always x or more. Were you connected when you were doing that mastery?
If i recall i placed a royal keep (the one you get in age 3 or 4 i think as upgrade path) and build a TC next to it to activate the aera of effect. Then build a bunch of stables around it and a few normal keep in the mix.
Got it the first time. I completed the french mastery without issue otherwise.
For the challenge that you need 2000 gold/food/stone/wood from the guild hall just stop mining rock, take note of the # you currently have and wait. (Can take a while)
surrendering from game grants all masteries besides those that are about winning against cpu
Don't upgrade them to Veteran or Elite. Only Research the Two-handed Weapon Tech
It's the same with the Landsknecht Mastery, the mastery is very specific in wording
Kill Enemeys with X, only X will count and the advanced Units won't

I had the same issue as you. But, there is a trick to unlock this annoying task after my discovery. You can apply my experiment:
_ Create a skirmish game with 1v1. In the Game Setup, you modify Starting Resources are Maximum, Starting Age must be Age I, and Map State is Revealed. And don't forget the easy A.I.
_ Launch a game, using only 6 villagers to construct 2 Landmarks to reach Feudal Age and Song Dynasty.
_ Build 2 Villages and 1 House to get 100 Population.
_ Construct Military Buildings to train 100 militaries and delete 6 villagers to obtain 100/100.
_ You must stay in the era of the Feudal Age and Song Dynasty, bring your armies to destroy A.I. Landmarks, and this task completion pops up.
I hope my solution may help you. Besides, I expect the next patch could fix this task to prevent the occurrence.
For that one and many others that do not involve enemies you can achieve the mastery, like in this case 2 villages and get 100 pop BEFORE castle age, and then just surrender. Don't even have to have an enemy actually. Only for the test of strength and the ones that requires to kill units you would need to have an enemy. My guess is that for any of those that require a certain number of units or any amount of resources, you need to get all of them numbers after the conditions are met, like having 2 villages before making 100 units.
