they all go into the same "food" stockpile, but your villagers will gather faster/slower depending on the food source.

Yeah it's completely up to the source of food as to how much it contains, how hard it was to obtain that source of food, how fast the specific source is to naturally gathering from as well as technology and civ bonus'. However at the end of the day, it all goes into the same stockpile.

Fish (shoreline) -> Boar -> Deer -> Sheep & Farm -> Berry bush -> Fish (deep water).
This is the order without any technologies or other bonuses accounted for.

Deer gather fast, but need to be hunted. Rus earn gold by killing them (by killing any animal, really). Rus also gets a landmark that spawns deer in, IIRC, age III.

Sheep gather a bit slower, but still pretty fast. Yet you have to find them with a scout and bring them first. Mongols can produce sheep with pastures and gather more/faster (not sure, barely played those).

Fish is.. dunno, water maps aren't fun, so I never tried it. People say it gathers fast, too. Though no civ have any bonuses to fishing worth mentioning.

Boar is deer on steroids. Gives a ton of food, but you have to kill it first, and unlike squishy wolves boars kick arse like they came straight from Gothic 3. Also, Muslim civs cant gather boar.

Berries are slower to gather, unless you're a Muslim civ - they gather faster and their bushes have 500 food vs 250 if you built a mill near them.

Finally, farms. For most civs, farms are bad. They gather slower, and they cost a ton of wood. Unless you're English - your farms costs are halved, you gather 15% / 20% / 25% / 30% faster from them depending on the age, and age 4 enclosures upgrade gives gold from farms in addition to food - effectively giving you an infinite source of gold late game.

TL;DR just look what source of food your civ is geared to, and play to their strengths.

so rus seems the best one at gathering food right?

Usually if you want to micro a bit more, you'd gather the food around you, and when that runs out you'd start building farms.

Or if you're too lazy for that and you're not a competitive player just build farms
