The best counter are archers. They have longer range and allow you to play by your rules. Same goes for Horse archers and Mangudai
he suggested "Elite Knights and Siege". Do you really think that any sane person will do all upgrades for one of the most expensive units and then spam it together with other very expensive units (siege) just to counter a bunch of harassing camel archers (which will never be a core unit of the army btw, they are either a small harass squad or a support unit)?
Imagine suggesting that instead of a bunch of very cheap archers, which build faster and simply outrange Camel Archers making them stay away from you.

thats exactly what they are, a really hardcore mass killing support as long as you have knights or other unit you meatshield them but they can easily have a primary role in your army, specially springalds

It was clearly a core unit of his opponents army. They weren't just harrassing him or standing there to provide the anti cav buff. His opponent managed to get a full 150 of them, so I think he could have afforded knights and siege.
Considering what he was playing against, I'd probably recommend archers and siege instead of knights and siege, or maybe maa+siege because it is a bit overly heavy on gold. but its not like knights and siege gets hard countered.
Either way the answer is siege. I suspect the camel archer player was probably better than him and his teammates, so I don't think archers would have worked unless he was like English or something. Siege is so cost effective against them that it would at least force a transition.
Although really Abbasids would probably win a siege war if he transitions into culverins.
