There is even a priest who can do mass convert. He can convert units in a area around him.

Elephants die fast to Crossbows and Handcannons. Siege like Springald/Bombard/Culverin are also ok. Elephants cost 1000 resources each, you should have no problem building up a bigger mass of units.
