How do you actually counter french knights?

I know in theory Fu spearman and crossbows should do well but in practice a handful of French knights destroy. Conversions like aoe2?

you see france as enemy get some spearmen early to deffend. wall chokepoints of with palisades so they cant just roam around.

English longbowmen have been extremely OP for me to use against any unit so far in big numbers.
