Further playthroughs will get easier, as you gain new abilities and come to understand the game mechanics better.
You also did not need to get caught for breathing, it is possible to cross the border hiding in the truck with no additional unlocked skills.
You must successfully hide
You must pick up the food on the ground in the truck
You must NOT eat the food you picked up
You must throw the food at the dog
You must NOT move during the "checking for movement" portion of the trip
You must hold your breath the entire time, and not let go before the end
Failing to feed the dog, failing to stay still, both cause the "breath" timer to extend.
If you don't want to support either side during your playthrough, that is entirely possible. The "bag on a stick" options are for you.
You don't have to look up spoilers or learn a bunch to play this game. Going in blind was how I did it, and it was great fun for it.
The game has a lot of replayability too, so don't stress too much if your first playthrough isn't perfect.

(P.s. The devs don't "want" you to do anything specific. There are multiple endings and ending variants for all playstyles.)
