One tip i can give is that you can attack him directly without needing to stun him if you are using ranged attacks.
BTW, a good way to handle builds that has worked for me is to decide on one main offensive stat (STR/DEX/SPR) and one defensive stat, usually endurance but I consider perception as well if you want to play stealth or you could even use magic defensively and consider SPR a double dip if you commit to learning to use the defensive spells properly. Stealth works with any of the combat types so it's fun to try out new things but it tends to work best with a DEX build with the way the stats lean into each other.
As long as you focus on your two primary stats first you should be good. I tend to level them in a 2/2/1/.5 ratio with one or two other secondary stats depending on what I feel like trying out. So if I had 20 stat points to invest and I wanted a basic paladin with a bit of magic for healing and support I would level STR/END as my primary and SPR as my secondary leaving me with 8STR/8END/4SPR at whatever level I'd have 20 stat points to play around with.
Feel free to break the rule, this has just been a gold standard that has worked for me.
If you want to reset your build and re-level you just need to spend a few nights out farming and identifying items until you get the potion that lets you do so. Its icon is a thin blue vial.
One thing I will note is that pumping your endurance early on usually is a big help for any build that wants to block rather than dodge or use stealth. Block is actually the best defensive option once you level up the skill since stamina will become a large part of what limits your DPS. You could dodge, or you could block and absorb that damage to your green bar with the right perks.
Its a gimmick fight alright, i would prefer a straight up fight with him throwing magic at my face than this, but i guess its the price to pay for the boss to look like a big scary monster.
