Need some pro tips
Why am I dying so fast? I'm on adventure mode, and i pretty much die in one hit. Am i not understanding the game loop? Am I in a high level area? Should I be grinding on wolves ect.?

Depends on what you're dying to, if you're fresh off the beach you should be able to handle the undead, wolves, and a peasant or 2, but the outlaws in armor with real weapons are going to tax you until you get real armor, and weapons of your own.

You should head to the horns, talk to people, do some busy work for them and earn yourself some gold so you can buy some better gear from orlaith, that wanderers set of her's isnt half bad to begin with. Good armor values, low weight, and a handy skill on it.

Talk to the blacksmith, he'll teach you how to craft a few good armor sets.

Combat is mostly designed for NOT getting hit in the first place.
You have a parry and a dedicated dodge button. Archers and mages take out enemy from afar and dodge attacks, close combat types go for parries.

Its not like Skyrim where you can just facetank enemy hits on "Very Hard" with no problem since you are some kind of demigod in no time.

what would you recommend for an aspiring mage?
I'm on survival playing as a mage. You just need to dodge sideways after an attack comes and then do a heavy attack with a 1hander when low on mana, from what I've seen you're guaranteed to get at least 1 heavy attack in most of the time after you dodge an attack. Once you get a minion spell most enemies will agro to the minion and it becomes a lot easier.

You just need to wait for your openings and attack. Try waiting for mana to fully recharge so you can get a burn off with the fire spell in the beginning as burning does a lot of damage over time.

In addition to what shelledfade said above, I'd recommend practicing dodging, as well as a good beginner mage armor set can be found by doing the quest from the quartermaster at the Horns that's about the graveyard.

There's a lot of skeletons and undead, a couple tough but slow enemies, as well. BUT, it's well worth it for the set as a beginner mage.
