How exactly do you parry? Every time I try I get destroyed by the enemy.

Quick tap of the block button. You can try it outside of combat, if it drains stamina with no one hitting you you know it's a parry and not a block.

It's a bit finicky at level 1 but in the Dexterity skill tree there's a skill that can increase the parry window by up to 0.3 seconds, it makes a huge difference. Honestly it's a must-have if you're melee.
Also can't parry with a spell equipped unless you have a shield in the other hand. but its pretty close to dark souls parry like you need to be spot on right before they hit you also it appears that each weapon has a bit of a different parry window could be wrong about that but for example I believe 2h weapons take a bit longer to get the parry up. Again could be wrong.
The timing window for parrying is super small with a new character, but you can do it pretty consistently once you get an enemies pattern down. You need tap the block button basically the moment before their attack connects.

Parry becomes absurdly easy (maybe too easy) if you wanna put 3 of your skill points into the parry tree and increase the parry window by 0.3. It makes parrying with anything, shield or weapon, very easy. You can find a pair of gloves that gives a big parry bonus too which makes it stupidly easy to parry. Later you find a parry knife that doubles your entire parry window.

If you combine the knife + glove + 0.3 Upgrade its actually harder to MISS the parry window, ive parried enemies at absurd timings where It felt as if I had time traveled into the future and parried them before the weapon could reach lol
Like they said just tap the block button. If you hold it down for any length of time you block instead. You won't lose hp when parrying, that is how you know you succeeded.

The enemy reaction from a parry is completely different then a normal block as well.
The parry window is at the end of the player animation when you do it, not the start, for whatever reason. Once you understand this, it's a bit easier.

expedition 33 has trained me to parry when the atttack hits me lol darnit
the first parry frame activates when you -RELEASE- right-click. you can test it just standing around, the parry animation will drain the stamina bar

Thank you gigachad. This was my issue. I was parrying too late cause I thought the I frame window was the second i press block

That's either a shove or it's literally just the parry animation.
