I mean the settings is “grim dark arthurian” so its unlikely it will get all unicorns and rainbows, but sure, there will be outdoor areas with grass and flowers and even sun :D

Would love to be able to clear out the darkness and see some sunshine days in this game too. Especially since there are plans to add things like fishing, housing, etc.

I dont think there are any immediate plans for fishing and housing in this game. Definitely not for early access release.
But yeah, torches would be nice, especially for wyrdness mechanic. But that requires loads of dynamic lighting, which is gpu heavy
