You can either unload it with a crane (untie it first to be able to lift it), or you can "drop" it on the ground if your vehicle rolls over. Unless you drive up near the cargo and choose the option to delete it from the map, the cargo won't disappear and will persistently stay on the map, even if you switch the game to other maps / countries.
So if you prefer to play this way, I guess you can designate a storage point / hub, where you can bring and store any kind of cargo, to be picked up and moved somewhere else later. The only possible exception might be the logs -- they are so long and cumbersome that it might be a big pain to load / unload them a bunch of times (but you technically still could, if you wanted to).
