I've flipped quite a few trailers and had no way to right them without restarting the mission. Usually at that point I've had enough and I give the game a break for a day or two.
However, it's a minor set back and you've learned something to not do in the future or to be more careful with if you decide that's the best course of action.
On Epic, yes, I believe it is possible, because Epic handles save files a little differently than Steam. Epic saves are stored locally in your documents folder vs your Programs (x86) folder in Steam. Epic also makes a Backupslots Folder with past saves in it. Not really sure how to use one as I never had to use them in the past.
If on Steam, I don't know if it is possible or not. I searched my Steam save file location and cannot find any Backup save files, so I assume it is not.

Yes, when you get in a hurry or take the path that appears to be a shortcut.
If being in a hurry and taking shortcuts is your style of gameplay in Snowrunner, then my advice is to be sure and write a will before your soul is sold out to the devil. SnowRunner will taunt, tease and consume you. It will test your patience, self-restraint, and even your sanity. ;-)
There are very few, if any, shortcuts in Snowrunner. Snowrunner is not a race game to see who can get things done the fastest. Snowrunner is a game of patience and finesse. Get in a hurry, suffer the consequences and pay the price.
Best way to handle a rollover is to take it with a grain of salt, look at it like an opportunity for a challenge, and figure out a way to get another vehicle out there and help clean up the mess.
In other words, the best way to really enjoy the challenges of Snowrunner and get the most out it without losing your sanity, is to approach every situation as you would in real life. Look at it like an adventure. Doing that, I now welcome a rollover like you just described and actually look forward to driving out to the accident site and figuring out a way to fix it without recovering my vehicle to the Garage or deleting any Cargo.
Not knowing what map you are on, with only 18hrs in the game, I have to assume you are still somewhere in Michigan. If this is the case, did you go to the "Lumber Mill" or the "Log Station?" Since you only see logs at the location, then you are at the Log Station and not the Lumber Mill. You will have to go to the Lumber Mill in order to get Wooden Planks.
The only way there can be no Wooden Planks at the Lumber Mill is if you are not in Michigan or one of the Base Game Maps. If you are on one of the DLC Maps, or on a Mod Map, then there are some Lumber Mills that require Logs to be delivered first, and then the logs are crafted into Wooden Planks.
{Edit: And on some DLC and Mod Maps, there are limited amounts of Wooden Planks. Once you use them, there are no more Planks and have to go to a different Lumber Mill to get them]
I doubt this is the case with you, my guess is you are still in Michigan and just went to a Log Station and not the Lumber Mill.

If you want to load a last save, simply alt+F4 out of the game and then launch it again.
Important thing is to prevent the game from saving after the flip occured.
Mind you, this is unfair from this game's perspective, but won't be punished by in-game mechanics.
Snowrunner is a great game. Play it your way and pay no attention to elitism, it's inevitable with games like this. You'll feel the call of hard mode when the time comes.
