i like the tatra t813 too, but it's crippled by add-on options (or lack thereof rather).
For a truck with a crane; the Paystar 5600TS, 3 slots and a crane. Guzzles up fuel like its going out of style though. That or the Azov 73210, but its not getting much done on rougher roads until you get the active suspension. I'd probably go voron grad for non-dlc, but it leaves a lot to be desired.
Scouting; TUZ 166 did a great job and can handle some light cargo. YAR87 if you need to get some stuff done, unlocked Imandra garage early-on using only this scout.
If you have everything including DLC and don't mind the objectively OP/obviously stronger trucks; The TUZ 420 with its hack tires for scouting if you don't need to pull cargo. ZiKZ 605R can get places like its nothing and pretty much carries enough fuel and repair to build a second truck. F750, always locked diff, access to a crane and one slot, or a ton of tires, repair, and fuel, as well as able to pull non-scout trailers. Tayga because you can get it early-on and can handle most if not all terrain but no crane on it.
Honorable mentions; Twinsteer. The only truck with 4 slots, and if you grab the AWD can get around pretty much every location without issue. Downside is it can guzzle fuel if you don't manage your toggles, is kinda easy to flip, and no trailers or crane. Great if you don't want to buy a trailer. I've probably done over half of the game using this truck. BOAR if you need to take a heavy trailer on ice roads or maybe for long longs, it can be strong but I find other trucks can fit more situations better. Fleetstar F2070A has done enough for me that its still in my garage, decent early-on crane and cargo truck. Azov 42-20 can go far and go deep. Pretty great fuel efficiency and easy clearance of most hazards. Can be hard to drive and fairly easy to tip though.
I might have got off topic since I just fully load every truck when I get it now... Just in case you meant the biggest differences from stock to kitted-out; TUZ 166, "Bandit", Azov 73210, 6900 Twinsteer, and the Paystar 5600TS. All of these pretty much went from "kinda useful" to "yeah this is gonna get it done" after upgrades.
Do not exist a perfect truck in this game, there is better trucks for something and better trucks for other things, you will always find something lacking in every trucks. For example: in easy maps you can play with any truck, cos full upgraded every truck will do better or worst but will success but when you travel to russia the american trucks will have several stability and mud problems, you need the russian trucks: azovs and vorons. And if you travel to hard maps like Wisconsin or Yukon, trust me, you will need EXTREME trucks.
After this info, if you need a truck prepared for everything for example, as some friends here said, TAYGA KING is your option. Big fuel tank, decent consume, best tires, good power... (the 3 vorons also are rdy for extreme conditions i like GRAD cos the low fuel consume). Azovs are good (not for extreme conditions in my opinion), but they can't equip nothing more than a 2 mud tires when vorons can equip a 2'4 mud tires. Bandit is also an extreme conditions truck for non heavy cargos.
If we talk about HEAVYS Kolobs are the best for the heavy trailers, but antartic (good to carry large wood for example) is the most extreme in mud also caterpillar(also good for the medium wood).
Scouts is ez, tatarin for explorer, Ford as gas station and repairs and Yar to carry scout missions like travel with scout's trailer.
To say which truck is the best without specifying in my opinion is impossible in this game.

But it also comes to personal preferences.
For some missions you need huge mud tyres, for some missions you need to carry a lot of stuff, for some missions you need a lot of fuel, some missions you need a light truck which can carry a trailer so towing is easier, some missions need a small scout etc etc etc
some trucks can do crane, flatbed and trailer...etc..
For starter truck, I'd say the Azov 64. It's not quite a zikz but it's not far behind. It is a bit slow, though.
Even the new Tayga 6455B, although strong, still has trouble in my testing where the Zikz doesn't.
The 8x8s might be a bit more comparable to the 6x6s than you think. 8x8s typically have worse stats on their tires than vehicles with fewer wheels, and the Zikz is included in that. But I think the zikz compensates from the sheer size of its tires and power of its engines.
Another example is the pacific P16. On the surface, it looks bad - no all wheel drive and can't even use mud tires? Looks like hot garbage on paper. But the stats on its special duallies are higher than any normal mud tire (excluding the tatarin's, but the tatarin's aren't normal), so it can still be a pretty decent vehicle.
All that said OP didn't ask best in a specific category. So for an all rounder I'd have to say Zikz. Good endurance, carries a repair kit and extra fuel, good range of addons, not tippy, doesn't take component damage easily, high air intake, and utterly unstoppable.
...But as one review said of the Tayga 6455B, "It's another easy mode russian truck" - there are alternatives that are very strong - Azovs and Taygas mainly. But the best of the best: Zikz.
like on the starter michigan map for example I put the box from the GMC truck onto the fleetstar, cause the fleetstar already has AWD and the GMC didn't

Despite all this, I am not arguing that zik is the best snowrunner truck currently due to the characteristics you describe (I have two ziks), I just wanted to clarify that comparing it with a tayga does not seem appropriate.
