I haven't done Yukon or Wisconsin. There is crafting and probably punishing terrain that is a slog to get through.
Amur is quite a pain but very pretty. Very rough "roads", not much infrastructure of gas stations and stuff. I did get the Zikz 605r which is an awesome truck, but it took patience, planning, and quite a while. I haven't completed nearly everything here.
The Don area is pretty and adds Tatra trucks. I like the 813 and the Phoenix. Interesting area... not very large, but lots of obstacles to overcome. Haven't explored here much.
Maine is pretty big, very bad snow and mud, and you have to restore the garage from the get go. It gives you a new Tayga, though. That's what I am working on currently.
Tennessee adds the racing stuff which is not very exciting. The new azov truck also cannot haul, which is a shame because it looks really cool and has a nice fuel reserve. The scout Gorby can hook up a trailer and makes cool noises, though. Lol.
I have all the dlc and have about 150 hours in the game now and it says I'm 22% complete... so yeah this game is huge but a lot of that has been holding R2 in deep mud, or recovering my tipped recovery mission truck.
My goal is usually get new trucks, explore to get upgrades, and then do some missions. I have not even completed one single region cause I move around a lot.
Season 4 also has the best truck in the game in the form of the Zikz if that's what you're looking for. It trivialises a lot of content with sheer power but a lot of people enjoy that kind of thing.
Yukon isn't hard but it is a slog, all the deliveries are huge. Wisconsin is alright if you don't mind logging.
Maine is great if you want a challenge, you have to work for everything there, you don't even start with a functioning garage.
Difficulty is subjective but Amur is infamous for been unforgiving.
We're mainly looking for new content tbh, but we're both, I'd say, average at the game, so like, a challenge is appreciated, but sounds like Amur us off the charts for now haha
I'll look into Kola, Ykon and Wisconsin first, but I'll look them all up ofc!
