Level 8 gives you offroad tires, look forward to that!
You'll miss out on a lot of trucks that would help in the early game if you try to finish each map before going on to the next. All of the michigan maps have decent trucks you can find.
The Pacific P12 on Drummond Island is quite popular but only RWD.
The Twinsteer on Island Lake is quite unusual, but only RWD unless you get the Phase 1 DLC or play coop with someone that has it.
Now that I think of it, there's at least 1 good truck on EVERY map of the base game.
White Western is quite similar to Fleetstar in stats but trades its better offroad capability with a shorter bed which means no crane+trailer.
Twin Steer and the big Pacific are both some kind of beast of their own and not everybody likes them.
Paystar is a somewhat obvious choice to buy...
...but with the anniversary DLC, why not try those 2 trucks for free..?
Also aren't these trucks level locked + you need money for them ?
But since we are sharing advice here, I am happy to point out the consequence of doing as you say. It'll make the game seem easier as it is at first, and because you'll have failed to learn to cope with difficulty, it will then seem more difficult than it is when that difficulty ramps up.
But how you play is a personal choice; just be aware that this strategy probably trades frustration now against frustration later.

I've chosen to play the same way, by and large.
I wouldn't say the 64131 is a late game truck. It's a good truck and it's 8WD will make the earlier maps easier, but nobody ends up using it for everything in the mid game. It's low speed and bad turning radius make other trucks too attractive.
It's like having a bulldozer. You don't get stuck as much but you don't want to take it on a long trip.
Still, if you like the challenge that you get from the early american trucks, that's a valid play style too.
Buying a russian truck is a crutch choice and if you learn to rely on them, the harder maps (Imandra) will make you pay dearly for failing to learn how to navigate.
If you think Azov is going to ruin everything for you because it's a late game truck, no. It's very slow. For hard missions where I need to drive across the map I put it on a trailer and drive there with another truck. It's really slow.
