The game was designed from the ground-up for consoles so a controller or steering wheel is a much better control selection over M+KB regardless of your keyboard.
But to answer the actual question here:
1) I do not know if Analog keyboards will be recognized as-such or will be treated as normal keyboards. Even if they 'are' recognized, you'll have a better experience with a controller or steering wheel.
2) Yes, you can absolutely swap freely between devices. I have a Logi wheel, DS4 controller, and M+KB all plugged in and can freely swap between them. Heck it even sees my joystick which I custom bound controls for crane operation.
The end result (from the perspective of the game) is simultanious imputs of mouse, keyboard and joystick/controller and more often than not, games that detect multiple simultanious imputs essencially knock one imput out (normally mouse) or handles it badly (like mouse suddenly *sticking*).
So that is essencially the question: When you imput from multiple devices at the same time, what happens?
Steam has a 2 hour return policy. Just try it to see if it does what you want and return it if not. I would assume if you use more than one controller at once the game would keep swapping between detected input types. As said though, just a straight controller or wheel setup is the way to go here.

So, WASD are analog controller movements, while the rest of my keys remain the same. So I can still switch gears with the number keys, access my menu with 'V', etc.
The W key, for example, is like a gas pedal. If you push it a little, the vehicle revs a little. If you push it all the way down, you get full throttle. The same goes for turning. Pressing A/D a little turns a little bit - pressing a lot turns the wheel fully.
