Belching Barnacle - it is meant to be tracking? Does it need to spit SO much SO accurately?
Like really? I stood around in the tower to watch it a bit once, it must have spit out 15-20+ projectiles, and no matter where I am, where I'm going, it almost always inevitably hits me or the car. Like really? Of all the directions, all the different lengths it could go, somehow it hits me 1-3 or more times in one spurt?

Considering how anomalies work, it's safe to say that yes it's aiming at you in some capacity. If you're gonna post up in-range near one put a object like a tree between your car and it so it hits the object instead, as for you they don't curve midair so just watch where it's aimed at and don't move in that direction.

Pretty much all of the anomalies are aiming at you in some capacity, depending on where you're going to be spending most of your time, you need to outfit your car accordingly to make the most of the trip.

Yeah, I've had to take up some mitigating strategies to deal with this. I either park far away, or as you say put a tree in between it and my car. However I feel like it's slightly harder on foot, as I'm dodging anomalies in front of me, sometimes bunnies or other moving anomalies, or I'm trying to outrun anomalies popping up behind me.

I feel like plenty of anomalies are not actively targeting me unless I move in range, while plenty are even stationery and do not come after me. Even abductors, bubblegums, pickpockets, etc, only come after me if I come into their range and give me plenty of range to avoid them. I feel like the belcher has too great a range for that "coming after me" factor. Within a huge radius it'll "come after" me no matter what.

Most anomalies you can just park kind of far away, and it's a little bit of hassle to walk back sure, but with the belcher it's a huuuuuge hassle and huge range, especially when you have limited time in most zones that are not perpetual. And they're not exactly rare either. That's a huge map / artillery coverage considering.

Just my 2 cents and reasoning.

Yeah belchers are basically the artillery anomaly you get to meet in zone 2, as should any game they introduce a unique one that makes you consider alternative means of keeping you and/or your stuff safe, in this case you never had to consider cover that much if at all in the early zone, now you do especially if belchers are around. It's also not the only anomaly with a high range, just to warn you.

Like you did with the first anomalies you encountered, you do here. You found it's effect, you determined how to counter it, now you can """safely""" maneuver around it.

You need to keep out of range of that thing. Eventually, those things will hit you.
