Look for something substantial growing out of ponds. Also keep an eye out for light stands, the first deposit I found was on dry land and the lights attracted my attention.
Ultimately? This is one of the PITA that makes a resource radar a good investment.
For harvesting It's light sensitive, and will retract into the reef soon after you approach. Best harvest by a thermal vacuum, but a regular one will work if you provide lights. I've had decent results by firing a flare gun straight up over it, then working fast. Car headlights will do, at least from that angle.
