I guess there is no way around it since those lower the difficulty (like no damage).
The only settings that disable achievements are the No Damage options, and this is mostly due to certifications requirements for platforms specifying that Achievements must not be "too easy" to get, due to "achievement farmers" disrupting achievement economies on platforms. Basically, those abusing these systems ruin it for everyone. Trust me, the devs don't want to put these limitations in place, they're extra work to satisfy platform demands, but give no benefit to players.
That's to say a lot of the lesser accessibility options like "hi-visibility pickups" won't disable achievements (I play with hi-vis pickups on most of the time) but sliders that reduce or eliminate punishments for sloppy play like "no items lost", "no damage to player or car", or "no dying" will turn off achievements. The line between "accessibility options" blurs when you're not beating the game as otherwise intended.
The game will let you know on the options menu if something you toggle is in fact going to disable achievements.
