What i'm trying to say is: build your own models in real life however you want. Then when you get the game, do your best to copy it, while making necessary adjustements.
As an example, this vehicle was built off of the McLaren Solus chassis:

I get that. I was just hoping someone could get some screenshots of the base 5 or something. :P
Ace of Race (Street 1):
I really like the design of this chassis, as it gives a lot of space to work with and it's not a buggy mess like the Speed Champions chassis.

El Dragon (Street 2):
This is a drag rail chassis, you're kinda railroaded into building one specific style of vehicle with this one. You could try doing other things but I wouldn't guarantee any success with that.

Tiny Terror (Street 3):
This is just a basic 7x4 Go-kart chassis with two 1x2 plates underneath at the ends.
Old School (Street 4):
This is just a 2x12 plate with two 2x4 Large Peg Bearing Plates on it.
Straight and Narrow (Street 5):
This is just a City 12x4 car chassis with two offset small peg bearing plates underneath.
Street Champion (Street 6):
This is a Speed Champions chassis. Note that the Speed Champions wheels don't work with them due to a bug with the wheel geometry.
Big Tex (Off-Road 1):
This is the most complex of the default chassis in the game. IRL this chassis would have poor structural integrity without additional reenforcement.

Dune Zipper (Off-Road 2):
This is another City 12x4 car chassis, this time with the large peg offset bearing plates. Note the 2x4 plate between the chassis and the bearing plate at the back end.
Roughhouse (Off-Road 3):
I don't get the point of this chassis. Is it for rovers? Remote operated vehicles? Construction equipment? Is it a reference to King Kahuka from the Islanders subtheme of Pirates and his vehicle from LEGO Racers?

Eileen (Off-Road 4):
This one's a blast from the past.

Dirt Champion (Off-Road 5):
This is the Speed Champions chassis again, just with a larger selection of off-road wheels, most of which don't fit.
Longboard V-hull (Boat 1):
There's honestly so much stuff obscured in this one that I can't figure out what's going on. I know there's some SNOT going on in there, though.
Forked Tongue Hydro (Boat 2):
Pretty simple design, honestly. Just seven pieces, or five if you use the 2x4 inverted roof tiles.

Flying V Hull (Boat 3):
This is just a small plane front end with some 6-wide inverted slope boat hull segments behind it - 1 1x6, the other 4x6. There's a 2x8 underneath holding everything together.
Regal V Hull (Boat 4):
This is basically just a longer version of the Flying V Hull, using the inverted curved slope nose section and two 4x6 inverted slope boat hull sections. It's held together with a bunch of round 2x2 anti-tiles.
Fanboat Hydro (Boat 5): I actually don't recommend trying to build this chassis IRL without one VERY important change. The in-game version uses a pair of 2x10 plates, but they're held together solely by one single 1x2 brick.
