Concordia: Digital Edition is a fully playable game vs solo AI. We are constantly updating the game, adding more and more content (beta), and fixing all bugs and errors that we meet along - in some cases even the very same day they were reported! :)
In each of our games, you'll be able to see your score, undo your last move, etc.
As for Solitaria - I'll bring this up at today's meeting however, for now, I can neither confirm nor deny that we'll release Solitaria. As soon as there will be any info about this we'll surely post info about release plans on our Social Media channels so just please, stay patient! :)
In the board game, intermediate scoring really is just a way to show players how scoring works after playing a round. If you wanted to stick with playing solo on the physical version, it wouldn't be too difficult to create a spreadsheet that you can update after architect/senator turns to display a live score.
