If you mean that you want a way to cancel his horse regen phase, you can't. If you don't get at least one critical in before he jumps on his horse again then you're doing something extremely wrong and definitely not parrying all of his attacks.
And like I said, spirit attacks are very important to stagger him quickly.
And you just have to brawl with him for a while to beat the fight. You'll knock him off the horse twice before the fight ends.With the exception of one combo, all of his attacks are generous enough in their parry timings.

I fought Lu Bu for 5 hour straight trying a pure Wizard gameplay and was having a hard time breaking his spirit , then i give up the magic and just went 'parry+strong attack' . Got him first time this way
That's the secret for this fight , a single strong attack after parrying .
For his fire buff, shoot him with a water spell to cancel it .
For anyone having a hard time against Lu Bu , remember that combination of spells when facing a certain boss called Dong Zhuo later on xD
