So if you wanna suffer the camera controls / optimization issues go for it but I suggest you wait for the patch ignore these JUST GET A CONTROLLER LUL! people and chill.
These games are not designed to be played with M+KB and it's therefore always janky on release it's been the same with every single team ninja game and will stay the same for the ones coming.
both nioh and nioh 2 had the exact same issues.
Well since the mouse implementation is tr*sh I would prefer you trying out playing with keyboard only scheme instead, but here is Keyboard + Mouse layout of mine during the demo so that you can take reference and spin your own from it. I also try to make it as close as to Sekiro combat as well. Though quite complicated a bit due to too many Attack buttons (*)....

WASD = Movement obviously
Mouse = Camera movement obviously
F = Examine / Interact
Q = Lock-on / Reset camera (hold)
R = Use Items
Mouse Wheel = Switch Weapons (Non-combat state)
Shift + MouseWheel = Switch Items
Shift + 3/4 = Switching Range Weapons iirc.
* Left-Click = Light attack
* Shift + Left-Click = Heavy Attack or so called Spirit Attack, also for (Stealth) Riposte.
Since this game encourages deflection like Sekiro => Guard button is almost useless, so bind it the last where you wanted to, probably side Mouse-button
Since you can bind Deflect up to 3 keys, it's better:
E = Deflect (note: double tap = dodge. to mitigate the mouse delay)
Right-Click = Deflect (double click = dodge)
Space = Jump
Shift = Sprint (note; no dodge)
* 1/2/3/4 above WASD = Elemental Skill Cast
* C = 1st Spritual Martial Attack (you may say this is weapon skills)
* V = 2nd Spiritual Martial Attack
* Z = Summoning Beast as Attacking
X = Summong Beast as Buffing
* L-Ctrl = Aiming with Range Weapons
* L-Alt = Switching Melee Weapon + Attack at the same time (or Counter Attack they said)
Side mouse button (any, Hold) = Slow Walk, needed for stealth /Riposte attack.

There are few others but using them or not depends on you into co-op or not, but the above is pretty much what you need to play & complete this game.
I thought i could get used to the scuffed camera controls, but i cant. Its the least enjoyable gaming experience i had in a very long time and it actually affects your ability to play the game and react to certain things, bc you cant turn the camera precisely, nor at your will.
So for me, this is actually not playable.
I say dont get the game until its fixed, if it will be fixed, idk.
Very solid set up. Block isnt useless tho. If your blocking while you deflect and fail the parry you wont really take damage (unless its during the dashing motion before you return to guard.)
I hade my 2 side-mouse buttons as the Deflect and Deflecting Counterattack. I do not think the walk button works so when i need to walk i just guard and move.
You can also tap guard while you sneak up on someone to get a little extra speed without raising the alert.
