She looks like she weighs about 70 lbs or less at the smallest size, but okay.
There's no seam between the face and neck with the different combinations, so that's actually not the case. With that said, if you have a rougher body texture, you want to choose a facial texture to compliment it.
The character model is no different in cutscenes. The shadow resolution increases, and you might be treated to better lighting, but it's exactly the same...
Let's see your character.
Character creation should be at least on par with nioh 2 as this is just another iteration of the same engine, there is no reason to have a worse character creation but hey
people will defend anything nowadays, or maybe they always did and the stoopid is just starting to surface with the always online access.
About the mismatching texture, the problem is the body texture is too rough and can't be customized (In Nioh 2 you can't custom a body texture too, but it's smoother than this one.), so I expect it to be customizable or at least make it smoother whatever.
I opened the Nioh 2 character creator today to see what it was like and it's so much better.
After my first playthrough, I thought this too at first. Upon replaying and trying a new character, I found I missed an option to add more pores to my facial skin texture. It looked odd being in cutscenes next to Yuan Jin whose face was full of sweat and dirty pores meanwhile I appeared like an angel.

It's all about lighting. The harsh reality's that we won't always get the pretty model lighting outside the character creator at all times. You have options to emulate it in Photomode, but in-game... ya gotta cut your losses. Learned this in Phantasy Star online(s) a long time ago lol.
