Sneak attack will remove about 50% of its health, but after its parrying (or dodging) time. And yea, try to get your moral level up.
You can ignore it and come back later, or you can grind the enemies before it, level up a few times (which unlocks the magic system) and then tackle it when you're similar morale level. Grinding enemies in the earlier part helped me get much more comfortable with the combat system, magic and backstabbing enemies.
