Also keep in mind that most players do not play solo but instead hunt in groups. Be it with friends or randoms. That results in way less pressure as the Monsters aggression is split up between players. Its nigh impossible to cart unless you get hit and stunned or play carelessly by not healing when you should
I assume you have a whole different scale of personal problems in your life with that mindset.
but also i mean i played like 270 hrs in this game i feel i have to be good at it, its like studying really hard for a test and still failing; then realizing maybe its not coz i didn't work hard enuf but i'm just stupid. I can't accept that.

The quick recovery, buffed potion, easy distancing makes the aftermath of surviving an attack can be overcome effortlessly (provided you have the key resource: wirebug). If you have enough damage reduction or collect enough HP spiritbird, the game will indeed be crazily easy. If you don't, then you might find yourself doing pretty flawless without getting hit at all in a 5 minutes hunt but gets one-shot carted for making just 1 mistake.
No, you're not stupid. Every time you get hit, your brain is memorizing the exact frame you got hit on. Every time you try to dodge a roar and you get stunned by it, same thing. This game series is like, 90% monster knowledge, 10% weapon use knowledge.
You don't have personal problems. These people mostly do stuff until it's hard and then walk away from it the instant they find they can no longer do it. Which one sounds like more of a personal problem to you? Giving up because you ran into difficulty, or falling down and getting back up to try it again?
People think this game is easy because they don't really care how much they cart as long as they complete the quest. Might I recommend taking some time to max out on spiribirds prior to hunting the monster?
