Hub quests and village quests scale differently in Low Rank (which village only has)
There's little things here and there that can help when added up. Like hitting them in certain areas to deal more damage or knock em down. Can use a trap to temporarily immobilize them and get good hits in. Though I think the more traps you use the less effective they start to become. It's either that or the flash bombs. Maybe both... You may also get help from unexpected allies.. And there's things like consumables and other random stuff you'll unlock/come across that will help.
And in the pause menu you can check the 'Hunter's Notes > Large Monsters' section for tips on how to hurt them and whatnot.
Also, all armor has skills that come with each piece. That's another thing that can help in multiple areas.
1- Your weapon is bad. Upgrade it for faster kill times. A veteran would kill him in 4 min.
2- Early game monsters have easier moveset but the hitzones are the same. Meaning that you can check the hunter's notes to see where you should be hitting them to deal more damage. Hitting the right hitzone provides 2 or 3 times more damage than a bad hitzone. The higher the number on hunters notes, the better.
3- Armor skills play a major role in your damage output and kill times. Look for armor pieces with skills that provide more damage.

Also found the whole Wyvern thing pretty confusing and the combat somewhat slow and clunky - just issues because I'm new?
I'd say just keep doing whatever it is you're doing that's keeping you alive. If you're not dying, you're doing just fine.
The game and weapons do have a certain flow to them. As you get more gameplay experience and more comfortable with your move set, you'll understand better of what moves link well with one another and be able to use certain moves/sequences when opportunities present themselves, and even ways to put yourself in certain positions by using certain attacks.
Unless you've watched videos on your weapon(s) of choice, there may be a move or two you still don't know about.
Things may feel clunky, but it's possible it's because you're new and haven't adjusted to the flow of the game. It's definitely a lot different from most games I've played. And this game may present some difficulty spikes when taking on new monsters. So you may not be able just to sit in the pocket and keep swinging because you don't mind if you get hit or not because of the damage.
Edit: I don't know for all weapons, but. I know you can get some skills in one way or another to make you do certain combat actions faster.
