You should never be 1-shot. NEVER. Well, maybe a risen valstrax ambush, but that's it.
For the rest, just look for damage boosting things and take them. Each weapon has their own niche perks but a lot of skills work very well globally.
not really much you can do other than just progress through the story, and grind some materials to upgrade your weapons as much as possible along the way
You've neither explained why it's the 'worst' advice, nor offered the 'correct' solution (or any for that matter). I could point out what it DOES make you look like, but I'd much rather have more info than go down that route.
I feel like most of mine are like 10-18 minutes depending on the type and monster. I also don't min max so I assume it's pretty average.
You likely just need to build a G rank weapon to catch up. Kamura is good for starting.
If you aren't min/maxing, I'd recommend finding an armor set that generally targets your weapon with a few specific choices and roll with it for awhile.
Best way is to just look up 'what skills are best for x weapon' and then scroll through some armor sets until you see one that has a few of those skills.
Offhand I know bazel is good for gunlance, kulu yaku is good for horn, Golm is probably best for hammer or charge blade but I used it with a greatsword, etc.
And ignore JPM, probably.
If it's not that, then... er... it's probably how you're playing during the hunt. Take up a weapon guide, maybe?
Oh, also do NOT underestimate endemic life. If you use a palamute then you can have them sniff out specific endemic life on the map, and they can do serious damage or create serious openings.
Off the top of my head the ones I'm most happy to see are...
Blight beetles (water weakens monsters to damage, fire just does damage straight up, ice slows them and makes longer openings, thunder makes *any* weapon cause stun build up)
Puppet Spooder (free mounting!)
Stunkmink (free territory war!)
Marionette Spooder (Tug 'em out of the air, smash them into a wall, smash them into another monster, smash them into an environmental problem, etc. Free opening at the minimum!)
Blast Toad (free stagger n damage)
Just keep in mind that territory wars, mounts, paras, and sleeps are all on cooldown or resistances or whatever.
My dog just tells me where they are so I go get 'em. The result typically makes up for the travel time, especially if I was in the area anyways or collecting spiribirds.
You certainly don't need to min-max or meta in this game but looking at the builds can give you an idea of what kind of thing they're going for. I think you need a more coherent direction of damage to combine with your evade and such.
Defense is a good way to keep attacking but definitely pick a couple of damage things for example atk boost or such (the skill).
Combining certain armor sets in certain ways greatly frees up your ability to add other skills which will obviously shorten your kill times because you're doing more damage and or not getting knocked around, etc etc etc.
Things like Weakness Exploit (WEX) Crit boost, etc are indirectly (or really rather directly) going to lower the kill time but at the same time comfort skills are called that for a reason.
I know this is kinda vague but maybe someone else will have more specific advice I can only speak in general about all weapons and the hunt. It's really just a thing you kinda git gud at by playing aside from the skills and such you can ask about but knowing when to attack and dodge and things are more intuitive to learn on your own imo but those things also lower the hunt time by applying more pressure.
tl;dr git gud but also try to bring your skills together into something cohesive instead of picking randomly (also pick randomly why not)
Its hard to say whats going wrong without looking at gameplay though.
