Based on what you wrote and my long time experience with Monster Hunter and other games, I would not recommend this game for you to play with GF.
I recommend as alternative which is fairly cheap as you can use Remote Play with just one copy very well

Other than that, taking everything else into consideration I do not think there is a suitable game for your two archetype of players aside of MMORPG-like games. Elder Scrolls Online is currently cheap to get, but I strongly recommend Final Fantasy XIV, with the downside you need to join guilds/clans/free companies and so on.
If you are daring maybe you can get into Lost Ark and alike, but I tend not to recommend F2P models due to very "modern" aggressive marketing. There are really not many good coop games which lasts long, and for more recommendations there is too little information on what game you like aside from action/accents of creative farming a la Rune Factory.
craftopia looks great but whats the deal with all the mixed reviews recently?
and i've came across grounded and smallland before and they both looks good, but im not sure if we want to grind for items too much. same reason i want to avoid valheim, i played it for about 2 hours and felt like i was wasting time.
there doesnt seem to be any games that can match up to rogue heroes, animal crossing..
we want to play a game that has progress RPG, but like so much depth as it would take hours to learn. something casual RPG with coop with some farming/dungeon.

With that kind of attention span you're better of just watching tiktok videos or something, not playing video games.

When you draw your limit at 10 minutes to see if a game is fun or not, i'd be surprised if there is a single game that you dont find boring.

we ended up playing stardew valley and we racked more than 50 hours already but it's still not as fun as 20 hours of rogue heroes we racked.
i think i like something arcadey and rpg/roguelite element that has coop.
If attention span/time investment is an issue, pick something else. I play this as a 'date game' with my partner, and she and I love it, but it's a lot of time spent in menus, grinding, etc. That said, once you've gotten into the rhythm you can easily play the game in short bursts of a hunt or two and still feel pretty satisfied, so if you can make it over the learning curve, give it a shot.
If you intend on playing mostly co-op, pick this over MHW. MHW's co-op is bothersome when progressing through the game, making both players enter a new quest, go find the monster and watch a cutscene, and then leave and post the quest all over again to be able to do the quest together. MHR just lets you do everything together from the start, and has much less 'side' content. It's mostly just about fighting monsters
