Ah, yeah... the veterans trap.
Aknosom is actually the last of the first tier of monsters.
It is just perfect to have hunters who are used to endgame MH:W to be grounded again.
Start with the Village Quests first, and you will have a great time through and through.

In some of the older games you could honest to god cheese your way to a busted weapon by grinding volcanic gathering quests. Even if you have mats for the next weapon they won't show up in Rise lol. I don't think they did in World either, but World really didn't let you do much without getting through the cutscenes lol.
Also... Advance quests... avoid them. I ran a few valstrax ones because I didn't feel like grinding to 100... the amount of damage it did to me was... I felt naked lmao.
Yes I did went into it as if it was Great Jagras with basic komura gear, I've crafted bone by now and was surprised how fast all the other monsters fall compared to first experience xD.
Not going to lie; I come from games like Devil May Cry, and Shadow Warrior were the name of the game is to clobber the baddies as fast as you can, so naturally I picked the dual blades. --- the amount of times I was knocked around like a golf ball, and the amount of faints make me cringe when I think about it, and HR6 is too much of a nightmare with them (in my hands due to the above mind set)
Read more guides, decided to try the long blade and I am realizing though it may feel like longer with attack-attack-evade-evade-evade-attack-evade it actually takes the monsters down faster. Well that and I had to get through my thick skull that weapon skills are not flashy god like powers, and are meant to be used. Still not looking forward to facing off with Magnamalo with long sword O.o
Interesting. Imho dual blades is the weapon that enables you to dance around monsters pretty good. That said. You cant expect mastering weapons AND monsters without much experience with em. It took me hundreds of hours to reliably dodge and counter most of the monsters with DB.
Just now I experience the art of bonk bonk hammer and I feel like playing pinball. Still satisfying to land ko's. It will take time to learn it properly.

Dreadking legit oneshot me from full HP, that thing shoots actual nukes. I first thought we only got Mizu but then got Apex Los to show up, maybe he was locked behind AR progression. So I'm still hoping for Apex Blos to be in this update, just locked behind 181+, but they might be saving the last two Apexes for future updates.
From my point of view, sounds like you are on the right track!
I can relate though, why Monster Hunter videos can look like those other games when you do not know Monster Hunter yet ~ it helps when seeing the game mayhaps a little more like Street Fighter or Mortal Kombat, where you have a divers selection of weapons equals the cast of characters. Everything/everyone is great to play, some characters we like more to play than others, and some matchings are more difficult or easier - depending on the combinations.

Lance and Gunlance are easy to be overlooked by newcomers who like the fast, flashy gameplay. But when you start learning to understand how the game is to be played, it is exactly like you figured it out!
A slower weapon can be the key to make a certain hunt feel much easier!
And the more you get to know the game, the more fun you are going to have with every weapon - if you allow it!
You are absolutely correct with how you see Dual Blades.
The thing is - based on my personal experience - the Dual Blades can be a "beginner trap weapon". When trying out all weapons as a beginner in the training area, they do feel lightest, easy to use, and the swift usage is seeming covering the lacking of range.
But when actually using them, beginners have a hard time because they can be overwhelming hard to use when you want to attack, with many moves locking you in attack sequences more longer than weapons with slow moves but allows a quick discharge.
Dual Blades are great and cool without doubts. But they can give easily the wrong idea about weapon powers when you are not used to game mechanics. If you want, it is the same way how people look down on Lance often enough at the beginning.
I encourage everyone to play every weapon to get the most of Monster Hunter, as the game can feel quite different. "Bonk Hammer" ? I am loving it too. <3 The satisfaction to negate attacks and keep a monster stunlocked is just too great. Multiplayer fellows love that!
Like I said, I am used to much faster melee, where the name of the game is mow down the enemies as fast as you can, where you could either face tank the attack or step to one side, so dual blades seemed to be the right fit for me.
Now do not get me wrong, Monster Hunter has fast combat as well but I am just not used to, well you know moving out of the way. Dual Blades in my hands is more of a DPS role, where I have always played tank, so for now the long sword seems to me a comfortable middle ground for me.
