There's a lot to take in so,
Know your buttons. It gets confusing if you dont know what buttons to press when.
It's all about timing. All melee weapons have some form of iframe (via wirebug skills or animations from certain actions or at the very least damage reduction skills). It becomes necessary to know when to throw out these actions. Projectiles dont necessarily have to worry about stop button mashing as much as melee. Every button becomes deliberate in your button mashing.
Long Sword for example has Iai slash (special sheath slash) which is an iframe if you land the timing, 1/16 of a second so basically the instant the monster attack touches you. You wanna pick a direction as well when performing iai slash to avoid the attack itself. Your foresight slash is more forgivable, just perform it right before you get hit. Again pick a direction you wanna slide back to avoid attacks. Just note that just because you dodged the initial hit, doesnt mean you'll dodge multi hitting attacks (ie monster charges/fire blast). Again its knowing patterns and timing.
Other melee weapons have counter and it's heavily used in late game as your go to tool to avoid carting and dish out damage. You take reduced damage for high reward dps. So just take note of your health before throwing them out. Missing them leads to dangerous openings as your animation recovery is slow so try not to miss.
Other weapons like Switch Axe which I'm playing atm has iframes from just perfectly timed normal dodging. Add in evade extender and status trigger decos and I can just hop around building up damage. Others like Hunting Horn has iframes when you play your horn. Again, it's knowing the timing of your character animation when performing actions.
A good melee player (of any weapon class) doesn't stray too far from the monster. There is generally a pocket you wanna stay in and maneuver around and that should be enough to avoid most damage (average player) and all/almost all damage (pro). Once you learn monster patterns this becomes easier as you can generally predict most movements and just dance around the monster.
Always be moving. Generally you move around taking single shots until you find your opening for bigger hits leading to the stun. You only really stand still to perform combos when a monster is stunned.
If you want to play the game like it's Souls, then Evade Window and Evade Extender are your friends. Then git guud.
