if you mastered shield blocking you wont be needing earplugs, a well timed block will negate your armor weakness, and you can put all skill on other things that you need.
if you are fighting a very tough hide monster, you weapon bounces on hard spot, you need mindseye to negate that effect, if you are good at finding its weakness, you wont need mindseye anymore
Zino Chest is OK combined with the Spio (male characters is names differently) Waist for full Weakness Exploit.
Anjanath Waist is also a very good option for attack boost.
Rajang Legs are great for Critical boost.
Other ok pieces are Hunter Chest and Legs, Ingot Legs.
When you get the decos there are 4 pieces of gear with no skills but a level 1, 2 and 3 slot. These are Valk Chest (i think thats the spelling), Jura Gloves, Chrome Metal Waist and Arzuros Legs. They may seem bad at first but they are super flexible when you need specific skills.

I have been considering mind's eye but that would mean sacrificing some attack up on certain armour parts.
But the idea is to mix and match your armor. There's not a single armor set that's the best or anything like that. People often mix and match different pieces of armor to get those boosts and then fill out the rest with decorations. But depending on where you are, you might not have them unlocked yet or not all of them yet.
I personally just went with the highest def set until I finished the entire game (with finishing the entire game I am mostly referring to beating the two ''final bosses''). After that you unlock another fight at HR100, but on your road to that you've unlocked everything you can craft decoration wise and stuff like that.
Generally you don't play Mind's eye on LS or CB. CB gets the sword buff that gives it natural mind's eye. LS gets natural mind's eye on it's Spirit Slashes, Helm Splitter and Iai Slashes.
For LS, the biggest priority above all else is quick sheath 3.
In terms of endgame gear for LS, you're looking at something like this. This is based off my armor set I use on Switch. Also this is a very endgame style armor set. I think most of the pieces you should be able to get at your hunter rank tho.

This build would give you AB6, CB3, WE3, QS3, MT3. It's not the highest output build, but it gives you a ton of weapon sharpness with MT3+Deepest Night.
Edit: I'm sure you don't have all the decos to complete this build after thinking about it, but it should give you a good base line idea for what stats you're looking for, for LS.
Just with the stuff I mentioned though you get WE 3 from the arms, attack boost 4 from the waist and legs, and crit eye 5 from the legs and head with an extra 2 slot on the waist, the entire chest, and the entire charm. From there, people generally want some kind of sharpness skill, crit boost, and either protective polish or master's touch depending what you want and a lot of weapons have some nice extra skill like quick sheath or rapid morph. Weapons that want handicraft usually want magna gloves. Example with LS.

Charm with 1 QS and 2-2 which you put 2 levels of PP in. As you can see, you can't all the skills you might want as it's lacking 2 points of crit boost and doesn't have full crit eye either but it gives you 50 crit from WE, 25 from crit eye 5, and 10 from max might (on barioth chest) which does put the weapons crit at 100 (it has 15 base affinity). We also get enough handicraft and protective polish 2. A better charm could improve the set by allowing for more CB (for instance a QS2 3-2 charm could let us replace the gloves with valstrax and just get us 1 point of handicraft (which is enough to hit white) and let us swap the QS on the weapon for PP and the WE on chest and waist for CB giving you 100% crit with white, attack boost 4, PP 3, and QS 3. It's extremely strong.

Charm with 1 point of razor sharp. This requires only early easy to make armor, weapons, and decos and a very easy to make charm. it gives 75% crit (40 base, 30 from max might 3, 5 from crit eye 1), crit boost 3, quick sheath 3, razor sharp 3, wirebug whisperer 3. Once you get weakness exploit jewels you can swap in 2 of them either on the charm or in place of wirebug whisperer. That will put you at 105 crit. This set has relatively high defense early on and wirebug 3 lets you get hit a lot more without having to wait for wirebugs to recover because you wasted them on wirefall.
Are you not a little too early for that?
I leave you these for inspiration and the reminder that armour is not everything. Every armour can feel entirely different depending on the smart usage of decoration and on your luck of getting the right talisman.

Edit: Even though you cannot upgrade the Jang CB fully yet due to your HR, it is still your best choice for this type of set. Once you get the required mats you can upgrade it, but it'll already be powerful at its penultimate stage.

You can block most attacks with ease at Guard 3 guardpoints (Guard Up 1 means you can block pin attacks as well) and follow up with Counter Morph Slash for phial damage around 120-130 per tick. Don'r really need to care about maintaining sharpness as both weapons I listed have green for days.
Axe Hopper initial SAED axe hit is 150 motion value, so even on really high hitzones like Narwa you still deal good damage with your eventual 240 base raw and Wex 3.
I'm using full rathalos for my hammer build, because it's pretty straight forward. With all my gems and my talisman I'm getting

Propably not the perfect min maxed meta build but it works well enough tbh. Very easy to stun and break pretty much every part on every hunt. Except tail cutting obviously.
However, I'm only like 60% through Rise, so I'mma take it slow and enjoy it while I still can
I wouldn't care too much about optimizing, tbh. Some people enjoy it and obviously that's okay, but all the content Rise has, you absolutely do not need to min max. I went through the entire game (im including hub obviously) with a random bunch of stuff, only caring about rapid morph considering i'm a switchaxe user.
All that's left is Valstrax once I hit HR100, which will be in 4 levels.
