Edit: To actually answer your question though, Master Mounter increases the rate the gague fills so you can do a Mount Punisher. It also makes it easier to do an evade parry when youre riding a monster, which deals damage to the other monster
Technically only wire bug based jumping attacks and silk binds build towards the riding. IG normal vault does not. The quote below is from capcoms website the link will be below that
“Get monsters into a Mountable State by damaging them enough with Wirebug Jumping Attacks or Silkbind moves, letting them fight each other, or using certain Endemic Life. Approach a monster in this state and land a blow or sheathe your weapon and press to start Wyvern Riding.”

Except in game, aerial attacks with the IG have the same blue damage indicator (mounting damage) as wire bug/silkbinds/monster damage. In fact I'm pretty sure all aerial attacks do, including just jumping off your dog
I think the website is just mentioning the new stuff, it doesn't need to say any aerial attack counts because that's been the standard. also probably because wirebug/silkbinds are going to be the more effective method by far for the majority of weapons
So: It does not need to be a wirebug attack. Just anything with a blue background.
Normal IG aerial attacks definitely count toward wyvern riding
