Changing your download region will change your servers
Sorry. That is something I do not know. I have read about the region lock but have not noticed it myself yet. Maybe someone else can help you with better insight on the matter.

You understood it pretty much correctly.
If there is a ~ let us say ~ moment of freeze for one second. And you dealt 100 damage in that moment - the damage will be accounted for as soon as the freeze is over. That is when you are client. When you are host it will be accounted for anyroads. That is P2P.

You definitely have less to worry here. In PvP games it would be a different story, where every frame counts. Since it is a PvE game there is no issue for the game to sync such kind of desync with no disadvantages for the players.
I have had experienced that scenario you described myself.
We were trying to play the DEMO and were unable to connect even after i switched to the US download location but knowing that this definitely works in the full game is a relief.
Overall i feel there is much more polish and features in the full game. The DEMO barely does it justice and is more of a solo demo to get a feel and see if it runs

You are right about the polishment of the game and such. Thankfully Monster Hunter is by tradition a game which gets constantly updated with free DLCs to a certain point.
